This easy and simple one pan meal is a great for a quick lunch or a delicious side along a hearty dinner.

If you’re like me then you want to keep cooking as easy and simple with as little mess as possible. But of course it also has to be good! This easy one pan meal of bacon and peas with mushrooms and onions is easy, simple and only uses one pan.

The benefits of one pan meals:

  • 1.) Minimal clean up. This probably goes without saying but only using one pan for a meal makes clean up a whole lot easier and quick.
  • 2.) It simplifies the cooking process. Not needing to pull out a handful of different cooking tools and pots or pans is really helpful.
  • 3.) It saves time. Not only does it save time with clean up it can also save time on the actual cooking process.
  • 4.) If you have little ones (or even older kids) one pan meals are great when teaching them how to cook.

Ingredients you’ll need for bacon and peas with mushrooms and onions:

  • 1/4 pound (about 1/2 cup) bacon, diced
  • 16oz (2 cups) frozen or fresh peas
  • 1 small onion or half a large onion, finely diced
  • 6 cremini mushrooms, diced (about 1 heaping cup)
  • 1tbls avocado oil or olive oil (as needed)
  • 1tbls butter

How to make the bacon and peas with mushrooms and onions:

  • 1.) Heat a 10 inch skillet of your choice (I love my cast iron), dice the bacon and add to the pan. Cook until preferred crispiness.
  • 2.) While the bacon is cooking dice the onions and mushrooms.
  • 3.) When the bacon is done use a slotted spoon to scoop the bacon onto a paper towel lined plate to drain. If needed add 1 tbls of avocado oil or olive oil to the pan.
  • 4.) Add the mushrooms and onions to the pan and sauté until nice and brown and starting to caramelize.
  • 5.) Add the butter to the mushrooms and onions and let melt.
  • 6.) Once the butter is melted add the peas to the pan sauteing until hot.
  • 7.) Remove the pan from the heat and top the peas, mushrooms and onions with the reserved bacon pieces. Enjoy!

Notes about the ingredients:

  • I like to keep a pound of bacon in the freezer. This makes it easy for when you are using bacon to flavor a dish and you don’t need a whole pound. Simply cut off the amount you need and put the rest back in the freezer for the next recipe.
  • I would definitely only use frozen or fresh peas for this dish. You could used canned but they may end up mushy and not have that great taste and texture of frozen or fresh peas.
  • You can substitute any mushroom of your choice.
