The Best Chicken Noodle Soup
There’s nothing like a steaming bowl of hearty chicken noodle soup on a cold fall or winter day or when you are feeling under the weather. Packed with chicken, veggies and delectable egg noodles all in a rich nutritious chicken broth this soup is the best chicken noodle soup and is the ultimate comfort food.
This soup is also a labor of love and well worth the time it takes to make. You could use a store bought broth or broth base if you would like to shorten the process but I highly recommend making your own chicken broth for this recipe. You will need 1 hour to make the broth and about 1 more hour for the prep and cooking for the rest of the soup.
Homemade Chicken Broth
Ingredients:
- 1 whole fryer chicken, whole or cut into pieces
- 1 carrot, chopped into large chunks
- 1 stalk celery, chopped into large chunks
- 1 small onion or half large onion, chopped into large chunks
- 8 cups water
Directions:
- 1.) Place the whole chicken into a stock pot or large dutch oven.
- 2.) Add the chopped vegetables.
- 3.) Add the water and bring to boil, then lower to a slow simmer. Cover and let simmer for 1 hour.
- 4.) When the broth is done, remove the chicken to a large bowl to let cool. Once cool pick the meat off the chicken and dice.

The Best Chicken Noodle Soup Recipe
Ingredients for the best chicken noodle soup:
- 1 carrot, finely diced
- stalk celery, finely diced
- 1 small onion or half large onion, finely diced
- 2 cloves garlic, finely minced
- 2 tbls avocado oil or olive oil
- 1 tsp turmeric
- Salt and pepper to taste
- Reserved chicken broth
- Diced chicken from reserved chicken
- 12oz frozen egg noodles or homemade egg noodles
Directions for the best chicken noodle soup:
- 1.) Heat the oil in a stock pot or large dutch oven. Add the carrot, celery and onion and cook until starting to soften, about 7 minutes.
- 2.) Add the garlic and cook for 30 seconds to 1 minute, don’t let brown. Add the chicken broth and bring to a gentle simmer.
- 3.) Add the turmeric and season with salt and pepper to taste.
- 4.) Add the reserved diced chicken.
- 5.) Into the simmering broth add the frozen egg noodles (or homemade egg noodles) and cook according to package directions, typically about 20 minutes. Ladle into bowls and enjoy! Goes great with my soft and fluffy honey wheat dinner rolls.
