Almond Streusel Skillet Cookie

I love baking cookies, I love a good streusel crumb topping and I love my cast iron skillet. My Almond Streusel Skillet Cookie is the perfect marriage of all three! This large cookie is made from both all-purpose flour and almond flour giving it a delightful texture and hint of almond flavor. Butter is what holds it all together and gives the base of this cookie a buttery shortbread taste and feel. It’s topped with a layer of crumbled dough so you get to enjoy the full streusel experience. This cookie makes a great addition to afternoon tea or coffee. Pair it with a scoop of your favorite ice cream for a delectable dessert.

  • 1 ¾ cups unsalted butter, room temperature
  • 1 ¾ cups all-purpose flour
  • 1 ½ cups almond flour
  • ¾ cup sugar
  • 1 tbls ground cinnamon
  • ¼ teaspoon salt
  • 1 ½ teaspoons vanilla extract

Directions:

  • 1.) Preheat oven to 350 degrees. Butter an 8 inch cast iron skillet thoroughly with butter.
  • 2.) In a large mixing bowl add the all-purpose flour, almond flour, sugar, cinnamon and salt. Whisk together until well combined.

Make sure your butter is at room temperature so it will mix into the dry mixture easier.

The best way to mix the dough together is with your hands.

  • 3.) Add the room temperature butter and vanilla. Rub the mixture together with your hands until all the butter is mixed in. The dough will stick together when squeezed in your hand but will crumble apart easily.
  • 4.) Set aside one cup of the dough for the topping.

  • 5.) With the remaining dough place it in the cast iron skillet and press the dough until there is an even layer over the bottom of the pan. Press and make sure it’s nice and compacted together.

  • 6.) Take the reserved 1 cup of dough and crumble over the top the dough that has been pressed into the pan.
  • 7.) Bake for 35-40 minutes. Make sure to keep checking the cookie and once the crumbs on the top start to brown ever so slightly then it’s time to pull the cookie out.
  • 8.) Place the pan on a wire rack and let the cookie cool until it is room temp. Use a knife to slice the cookie into wedges. Serve and enjoy!

Notes:

  • If you don’t have a cast iron skillet you can use another 8 inch OVEN SAFE skillet for this recipe. You may need to adjust the baking time so keep an eye on that.
  • Make sure to butter your cast iron really well before adding the dough. This will ensure the cookie does not stick!
  • I highly recommend eating this cookie with a scoop of vanilla ice cream or whatever ice cream your heart desires. You will not be sorry!
  • This is a very rich, buttery cookie, and that’s a good thing! Just keep that in mind when you are deciding what size slices to cut.
