Vanilla Wafers

Freshly baked from scratch homemade vanilla wafer cookies in white cupcake cups.

There’s something nostalgic about vanilla wafers. Crispy, buttery and just the right amount of vanilla and sweetness these cookies feels like they belong in a vintage cookie jar on your grandma’s kitchen counter. These little cookies also bring back childhood memories of road trips in the summer to Southern California to visit family. We always had a box or two in the snack bag.

This homemade version is made with real butter, a whole egg, and a generous splash of vanilla extract. You can even scrape the caviar from a vanilla bean pod for that beautiful speckled look and deep, rich flavor if your little heart desires.

Whether you’re baking these to pack into a lunchbox for a treat, or just to keep on hand for afternoon coffee or tea, they’re a delightful, nostalgic treat that’s incredibly easy to whip up from scratch.

Ingredients you will need for these homemade vanilla wafer cookies:

  • 1/2 cup granulated sugar
  • 1 stick (1/2 cup) unsalted butter, softened
  • 1 egg
  • 2 teaspoons vanilla extract
  • Caviar from 1 vanilla bean pod (optional!)
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt

Directions:

  • 1.) Preheat oven to 350 degrees. Line a baking sheet with parchment paper or a silicone mat.
  • 2.) In the bowl of a stand mixer add the butter and sugar and cream together.
  • 3.) Add the egg and vanilla and vanilla caviar (if using) and mix together well.
  • 4.) Add the flour, baking powder and salt and mix until well combined.
Piping vanilla wafer cookie dough onto a silicone mat lined baking sheet.
  • 5.) Using a piping bag or ziploc bag with the corner cut off, put the dough into the bag and pipe onto the lined baking sheet in 1 tablespoon circles.
Gently pressing down vanilla wafer cookie dough to flatten out the top before baking.
  • 6.) Dip your finger in some water and gently press the tops of the cookies down so the tops are smooth.
  • 7.) Bake for 12-15 minutes, until the cookies are just beginning to turn golden brown around the edges. You will need to keep an eye on them!
  • 8.) Remove from the oven and place the cookie sheet on a wire rack to start the cooling process. Once things have cooled slightly you can place the cookies directly on the cooling rack to cool completely. They will crisp up as they cool. Enjoy!

Notes:

  • You will need to watch the cookies closely when they are baking. You want them to be crispy but you don’t want them to burn. Once they start browning they will burn very quickly.
  • You can easily double this recipe if you need more cookies.
  • Store in a airtight container.
