Homemade “Pop Tarts”

In this post I’m going to share with you how to make homemade “Pop Tarts”. Using my simple and delicious easy all butter pie crust and your favorite jam you can make these charming, delicious little pastries at home.
Pop Tarts are one of those nostalgic childhood foods for me. As an adult I am older and wiser and rarely, if ever, eat store bought Pop Tarts. I am now a reader of labels and am very careful about not putting ultra processed foods into my body. That’s one of the reasons why I enjoy finding ways to make these fun treats at home from scratch. I’m in control of the ingredients so I know exactly what’s going into my body and my family member’s bodies.
Ingredients you will need for these homemade “Pop Tarts”:
- My easy all butter pie crust dough (you can find the recipe here)
- Your favorite flavor of jam (in this post you will see me using my homemade wild huckleberry jam)
- 1 egg and 2 tbls water for an egg wash
- Sanding sugar for topping (optional)
Directions:
- 1.) Preheat oven to 400° and line a baking sheet with a silicone baking mat or parchment paper.

- 2.) Roll out your prepared all butter pie crust dough nice and thin. Cut into rectangle shapes, any size you would like. You will need bottom and top pieces of dough.

- 3.) Place the bottom pieces onto the prepared cookie sheet and put a nice big dollop of jam in the center. Make sure to leave about a 1/2 inch space around the edge.

- 4.) Dip your finger in water and run it around the edge of the bottom piece of dough. Place the top piece of dough on top and press gently. The water will help the two pieces of dough stick together. Using a fork press the two pieces of dough tougher around the edge.
- 5.) Pierce the top of each “Pop Tart” to make little steam vents for steam to escape in the baking process.

- 6.) Whisk together the egg and two tablespoons of of water to make the egg wash. Using a pastry brush or folded up paper towel brush the top of each pastry with a thin layer of egg wash.

- 7.) Sprinkle the top of each pastry with the sanding sugar if you are using. You can certainly skip the sanding sugar if you wish.
- 8.) Bake for 20-25 minutes until the edges start to turn a light golden brown. Make sure to check them periodically since baking times can vary in different ovens.
- 9.) Let cool slightly on a wire rack. Enjoy warm! Store in airtight container.
